Chocolate Mousse - Serves 4
 
  • 12 oz dark chocolate
  • 1 oz butter
  • 6 eggs (separated)
 
 

Step 1 - Melt the chocolate and butter together over boiling water on a low heat, making sure not to overheat..... when fully melted and glossy, remove and cool for approximately 1 min.

 

Step 2 - While the chocolate mixture cools, lightly beat the egg yolks together, then fold into the chocolate after it has cooled for the 1 min.

 

Step 3 – Whisk the egg whites until you get soft peaks and then fold in to the mixture, place in moulds and leave to set in fridge.

 

If you’re feeling fruity, place some fresh raspberries/strawberries into the moulds before pouring in the mousse.

 

Serve with fresh berries & a homemade shortbread biscuit.
